Just bread...

Bread is said to be the flesh of God. Is it one of those strange metaphors of the semitic languages that we misunderstood? However bread is holy. Bread, as well as wine, is one of the achievements that made human civilization grow, feel happy and secure. When I taste my newly baked bread and share it with my beloved ones, I feel rich and blessed.

My bread made by sour dough, water, wheat flour and some salt. I started the sour dough two years ago and the it has been fed once a week with some water and a spoon of rye flour. So it is actually like a pet.

Anyway, they produce almost all they consume and I admire that. This is how it should be. I bought from their shop 10 kg of flour. They had a great writing on the wall about their flour which is a bit more expensive than the industrially produced one. The last mentioned is ground at a higher speed so the process will be more economically efficient. As always, when greed and money rule the game, everything ends wrong. The industrial process develops higher temperature which releases the gluten in the ground seeds and changes the biochemical structure. This is why gluten-intolerance have increased since flour started to be ground in high speed mills. The antroposophic society grind their flour in low speed so the primal structure of the wheat is preserved in its natural state. They use old kinds of seeds and not genetically manipulated ones.
